Pre-heat air-fryer to 400 F
(You can do the same with an oven, may need to cook a little longer).
Chop the red bell peppers and 1/2 onion into thick strips.
In a bowl mix the veggies with a little extra-virgin olive oil, sea salt and cracked pepper.
Pop into air-fryer for 20-25 minutes. Start checking at the 15 minute mark. You don't want to burn your veggies but I do like mine crispy so I let them roast for a little longer in the air-fryer.
While the veggies are cooking, pull out chicken tenders and lay on a cutting board. Cover the chicken tenders with a piece of saran wrap and begin beating with a tenderizer (meat mallet) until flat & even.
Season with sea salt and cracked pepper.
Heat up deep grill pan (a regular pan works fine, but a deep grill pan takes thing to the next level).
Add a little extra-virgin olive.
On high heat place tenders on the pan. Do NOT move them. Let them cook into one place for a few minutes. Then flip them and let brown on the other side. Cook them for a few minutes on each side and then let to rest for a few minutes on a plate for a little additional cooking. Make sure meat is cooked through before eating.
Add the chicken and veggies together and you have a great meal. Feel free to use a little more additional seasoning.
